Ube Waffles (GF & Protein)

Ube Protein Waffles

 

Ingredients:

 

- 180 grams (1 1/2 cups) gluten-free oat flour

- 60 grams (1/2 cup) vanilla protein powder

- 4 grams (1 teaspoon) baking powder

- 2 grams (1/4 teaspoon) salt

- 2 large eggs

- 300 milliliters (1 1/4 cups) unsweetened almond milk

- 60 milliliters (1/4 cup) maple syrup or honey

- 5 milliliters (1 teaspoon) vanilla extract

- 30 grams (2 tablespoons) melted coconut oil

- 120 grams (1 cup) rice flour

- 60 grams (1/2 cup) almond flour

- 1/2 cup purple sweet potato, peeled, cooked, and turned into puree

 

#### Instructions:

 

1. **Preparation:**

   - Preheat your waffle iron according to its instructions.

 

2. **Dry Ingredients:**

   - In a bowl, combine oat flour, rice flour, almond flour, vanilla protein powder, baking powder, and salt.

 

3. **Wet Ingredients:**

   - In another bowl, whisk together eggs, almond milk, maple syrup, vanilla extract, and melted coconut oil.

 

4. **Batter:**

   - Gradually add wet ingredients to dry, stirring until well combined. Let the batter rest for a few minutes to thicken.

 

5. **Cooking:**

   - Spray or grease the waffle iron. Pour batter evenly and cook until golden and cooked through.

 

6. **Serving:**

   - Serve waffles with your choice of toppings: mango, blueberry, strawberry, condensed milk, Persian fairy floss, and toasted coconut flakes.

 

### Ube Ice Cream

 

#### Ingredients:

 

- 2 cups peeled and grated Ube (purple yam)

- 1 cup whole milk

- 2 cups heavy cream

- 1 cup granulated sugar

- 1 teaspoon vanilla extract

- A pinch of salt

 

#### Instructions:

 

1. **Ube Preparation:**

   - Peel, grate, and cook Ube until tender. Mash or puree until smooth.

 

2. **Base:**

   - In a saucepan, combine whole milk, heavy cream, and sugar. Stir until sugar dissolves.

 

3. **Ube Addition:**

   - Add grated Ube to the mixture. Stir well.

 

4. **Flavor Infusion:**

   - Heat the mixture, add vanilla extract and a pinch of salt. Stir and let it cool.

 

5. **Chilling:**

   - Refrigerate for at least 4 hours or overnight.

 

6. **Churning:**

   - Pour the chilled mixture into an ice cream machine and churn for 20-25 minutes.

 

7. **Freezing:**

   - Transfer churned ice cream to a container. Freeze for at least 4 hours until firm.

 

8. **Serving:**

   - Scoop Ube ice cream into bowls or cones and garnish with fresh mango, blueberry, strawberry, a drizzle of condensed milk, Persian fairy floss, and toasted coconut flakes.
